Fig and Nut Protein Bars

I am always looking for high protein snacks to keep me going throughout the day and I just love the combination of these fig and nut protein bars. Made with moist organic dried figs I combine raw nuts and gogi berries with dessicated coconut and seeds.

Almost as soon as you have taken the first bite not only are you pleasantly surprised at how delicious it is but you almost feel the increased energy surging through your body. Then it’s back to work to get another few hours of productive work done!

fig and nut protein barsYou can make these into any shape you like, but I like the cake look as you feel you are having a slice of cake without the guilt! I added 70% dark chocolate chips but you can omit these or replace them with any dried fruit like dried cranberries, apricots or mangoes. 

Figs

The seeds in the figs add a pleasant crunchy texture when you bite into the fig and nut protein bar. They are also high in natural sugars so they provide all the sweetness to the recipe. They have a rich source of calcium , magnesium, potassium, manganese, copper and iron which provides a high amount of energy. 100g of figs provides 3.3 grams of protein and 9.8 grams of fibre. Figs are alkaline and help regulate blood sugars. 

Nuts and Seeds

Nuts and seeds provide excellent sources of protein and minerals and are a welcome addition to any nutritional recipe. They are high in essential fatty acids and vitamin E. They have a high oil content so are used in medicine and cosmetics as well as food production. Nuts and seeds are known to fight against heart disease and diabetes.

Fig and Nut Protein Bars 

Ingredients

  • 200g dates
  • 150g almonds
  • 20g shelled pistachios
  • 2 tablespoons almond butter
  • 1 teaspoon cinnamon
  • 20g chia seeds
  • 20g flax seeds
  • 50g dark chocolate chips
  • 20g gogi berries
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 handful of pine nuts
  • 2 tablespoons desiccated coconut

 

Directions

  1. Place the dates and almonds into a food processor and blitz until smooth. Tip into a large bowl.
  2. Chop the pistachios and add them to the date and almond paste.
  3. Add the cinnamon, chia seeds and flax seeds and mix until well combined.
  4. Fold in the chocolate chips and half the gogi berries.
  5. Line a round or square tin with greaseproof paper and tip the mixture into the tin.
  6. Press down until it all comes together. Top with pine nuts, pistachios, the remaining gogi berries, coconut and pumpkin seeds.
  7. Chill until it sets. Remove from the tin and cut into slices or bars.

Note: You may omit the chocolate chips and add dried fruit like cranberries, apricots or mango.
