Roasted Pumpkin and Chorizo Risotto

I don’t know about you, but autumn is my favorite time of the year. I just can’t stop baking and cooking delicious autumnal offerings from fruit, vegetables and autumn spices. I can’t pass a pumpkin in the supermarket without buying it. Which probably explains the 6 pumpkins sitting in my vegetable wrack waiting to be eaten! When the husband says “Oh no! Not another pumpkin!” I just shrug my shoulders, walk away and smile, knowing that my family will be grateful when I actually get round to using them! So apart from carving and decorating your pumpkin there are hundreds of fabulous meals you can conjure up in the kitchen using pumpkin. And I can promise you this won’t be the last pumpkin recipe I will share this Halloween! So this week you will love my recipe which uses, yes, wait for it, pumpkin, along with autumn spices and a taste of the Mediterranean, chorizo. This is the comfort food to beat all comfort foods, especially with the weather we’ve been having in Ireland recently! And the best thing about this recipe for roasted pumpkin and chorizo risotto is it is so easy to make. Which makes it a perfect midweek supper or lazy Saturday dinner. So go ahead, buy your pumpkin and enjoy this culinary season!

Pumpkin and Chorizo Risotto
Serves 6
A delicious recipe for risotto made with chorizo, roasted pumpkin and autumn spices. The perfect comfort food this autumn!
Ingredients
  1. 1 whole medium pumpkin, approx 2.5kg or 700g diced peeled fresh pumpkin
  2. 1 onion
  3. 2 cloves garlic
  4. 200g fresh chorizo
  5. 3 tablespoons olive oil
  6. 500g risotto rice
  7. 1 tablespoon smoked paprika
  8. ¼ teaspoon ground cinnamon
  9. pinch of ground cloves
  10. seasoning
  11. 200ml white wine
  12. 1.5 litres vegetable stock
  13. 1 handful fresh chopped parsley
  14. 50g parmesan, grated
  15. 2 tablespoons pumpkin seeds, to garnish

Instructions
  1. If using a whole pumpkin, slice the top off and scoop out as many seeds as you can. Drizzle with olive oil and roast in a preheated oven at 180ºC for 35 minutes or until soft. Scoop out the remaining seeds and the pumpkin flesh and dice. If using diced pumpkin, toss in olive oil and roast for 20 minutes. Reserve for the risotto.
  2. Chop the onion and garlic and add to a saucepan. Cover and sweat for 7 minutes, stirring occasionally until soft.
  3. Peel and chop the chorizo into bite sized pieces. Add to the pan along with the paprika, cinnamon and cloves. Stir on a low heat for 5 minutes to impart the flavours.
  4. Add the rice and stir for one minute to coat with the oil and spices.
  5. Add the white wine and stock. Bring to the boil, cover and simmer for 20 minutes until al dente.
  6. Add the roasted pumpkin, grated parmesan and fresh parsley. Stir for one minute. Taste and season to your liking.
  7. If using the pumpkin for display, fill the pumpkin with the risotto, top with pumpkin seeds and serve immediately.
Notes
  1. Butternut squash may also be used in this recipe.
  2. Instead of buying pumpkin seeds, reserve the seeds from the pumpkin and roast in the oven for 15 minutes.
